Lately I have been trying to find healthy breakfast and snack ideas for my kids, who do not like to eat breakfast all that much. They then tend to grab something not so healthy later in the day!
I recently came across something on Pinterest (I LOVE Pinterest!) that looked yummy and had to try it. It's called overnight oatmeal, and can be made many different ways. It can be low calorie (for me!) or higher calorie for those who need it. I realized that this would make a great braces-friendly breakfast too!
The first one I tried was for my son and husband. It's called Chunky Monkey Overnight Oatmeal. Who could resist the sound of that?? And guess what? They both loved it!

What I used to make it lower in calories is Wegmans light banana yogurt, and Organic Powdered peanut butter.
The oats get nice and soft- no chewing involved!
For myself I made a blue berry version that I found here:
Blueberry Muffin Overnight Oats
Just make up a bunch of them in mason jars and store in the fridge for a quick healthy breakfast!
